RECIPE FOR DRY-FRIED SHRIMP WITH GINGER
Title: Dry-Fried Shrimp With Ginger

Ingredients:
4.00tbPeanut oil
2.00lbCleaned, unshelled shrimp
2.00tbMinced garlic
1.00tsMinced fresh ginger root
4.00tbCoarsely chopped scallions
2.00tbChinese rice wine, or:
Dry sherry
2.00tbLight soy sauce
0.50tsDark soy sauce
1.00pnSalt
0.25cChicken broth

Instructions:
HEAT A WOK over a high flame.
Add the oil, and when it is hot, stir-fry the shrimp quickly until they turn pink.
Add the remaining ingredients.
Continue stirring until the shrimp are cooked (about 3 minutes).
